Braised beef brisket (in the Cook's Essentials slow cooker)
For the 1.5 litre cooker:
1 tbsp vegetable oil
1kg (2lb 4oz) joint beef brisket
1 onion, peeled and sliced
1 carrot, peeled and sliced
1 stick celery, sliced
Salt and pepper
300ml (½ pt) beef stock
½ tbsp plain flour
How to make it...
Heat the oil in a frying pan then add the beef joint and brown on all sides.
Place joint into the slow cooker and add the vegetables around the sides. Season the meat and vegetables then pour the stock over.
Cover with the lid, select ‘High’ and cook for 6 hours or 'Low' and cook for 10 hours.
Remove the meat and vegetables to a warm serving plate and cover with foil.
Pour the juices into a small saucepan. Blend the flour with a few tablepoonfuls of water until smooth then stir into the juices, bring to the boil, stirring constantly, until the gravy thickens then simmer for two minutes and serve with the joint and vegetables.
