Pork, apple & sweet potato casserole (in the Cook's Essentials pressure cooker)
For the 4 litre cooker:
2 tbsp vegetable oil
4 pork shoulder steaks, cut in half
1 large onion, peeled and sliced
2 small dessert apples, cored, halved and sliced
400g (14oz) sweet potato, scrubbed and sliced into 1 cm pieces
Salt and pepper
2 tsps wholegrain mustard
2 tsps cornflour
450ml (3/4 pt) pork or vegetable stock
For the 2.5 litre cooker:
1 tbsp vegetable oil
2 pork shoulder steaks, cut in half
1 small onion, peeled and sliced
1 small dessert apples, cored, halved and sliced
200g (7oz) sweet potato, scrubbed and sliced into 1 cm pieces
Salt and pepper
1 tsps wholegrain mustard
1 tsps cornflour
300ml (1/2 pt) pork or vegetable stock
How to make it...
Heat the pressure cooker on ‘Brown’ then add the oil and the pork steaks and brown on both sides.
Now remove the pork and add the onion, apple and sweet potato and stir together cook for 3-5 minutes until browned.
Combine the mustard, cornflour and stock and season to taste then stir into the onion, apple and sweet potato. Return the pork to the pan and stir everything together.
Close the lid, select ‘Stew’ and cook for 16 minutes. Reduce pressure rapidly and serve.
