Rice Pilaf (in the Cook's Essentials pressure cooker)
For the 4 litre pressure cooker:
2tbsp pine nuts
2tbsp whole almonds
2tbsp olive oil
1 medium onion, finely chopped
225g white Basmati rice
1tbsp chopped apricots
Double volume of hot vegetable stock
Chopped coriander to serve
For the 2.5 litre pressure cooker:
1tbsp pine nuts
1tbsp whole almonds
1tbsp olive oil
1 small onion, finely chopped
110g white Basmati rice
1/2tbsp chopped apricots
Double volume of hot vegetable stock
Chopped coriander to serve
How to make it...
Heat the pressure cooker on ‘Sauté’ then add the almonds and pine nuts and toast until browned. Remove and allow to cool. Now add the oil to the pressure cooker. Once hot, add the onion and cook for about 10 minutes until softened.
Now stir-in the rice, pine nuts, almonds and apricots. Add the stock then close the pressure cooker. Select ‘Rice’, close the valve and cook for 15 minutes.
Release pressure rapidly then stir in coriander and serve.
