Saucey chocolate pudding (in the Cook's Essentials slow cooker)
For the 1.5 litre cooker:
110g (4oz) plain flour
110g (4oz) caster sugar
55g (2oz) cocoa powder
1tsp baking powder
25g (1oz) butter
150ml (¼pt) milk
Sauce:
300ml (½pt) boiling water
175g (6oz) Muscovado sugar
55g (2oz) cocoa
How to make it...
Sift the flour and cocoa into a mixing bowl and stir-in the caster sugar and baking powder. Melt the butter and add to the mixture with the milk, mixing until smooth. The mixture will be a fairly thick paste.
Spoon the mixture into the greased slow cooker and level the surface.
Measure the boiling water into a mixing bowl or large measuring jug then stir-in the Muscovado sugar and cocoa and beat together until smooth. Pour over the mixture in the slow cooker but do not stir!
Cover with the lid, select ‘High’ and cook for 1½ hours. As the pudding cooks, the sponge will rise and leave a rich chocolate sauce beneath.
