Spicy bean & vegetable soup (in the Cook's Essentials Soup Maker)
1tbsp olive oil
2 small onions, finely diced
1 green pepper, de-seeded & finely diced
2 cloves garlic, peeled & crushed
2tbsp plain flour
½ tsp chilli powder
400g (14 oz) can chopped tomatoes
400g (14 oz) can mixed beans in water
Salt & pepper
2 vegetable stock cubes
600ml (1 pt) cold water
Garnish:
4 slices garlic bread, toasted
Heat the olive oil in a frying pan and fry the onion & pepper in the oil for a couple of minutes then add the garlic and fry for a further minute. Now stir-in the chilli powder and flour then add the tomatoes, seasoning & stock cubes, stirring. Tip into Soup Maker and add enough water to reach the 'Max' level then select ‘Chunky’. Serve with a piece of toasted garlic bread floating on top of each bowl.
